- 1-2 stalks of lemongrass (~300g)
- a few kaffir lime leafs (about 5)
- a handful of cilantro sprigs (about 10)
- 1 red onion
- 1 lime
you simply add:
your choice of (1½ cups) protein
some recommendations:
- chicken thighs
- chicken breast
- shrimp
instructions:
prepare
- wash all vegetables
- 2½ cups potable water or your favorite broth
- 1½ cups meat (or protein substitute)
- cube red onions
- chop mushrooms
- chop cilantro, keep the stem
- tear kaffir lime leaf
- thinly slice/chop galangal root
- lightly smash lemongrass, then slice/chop diagonally
- chop/mince/crush Thai chili (optional)
let's cook!
- add water to medium-sized pot, bring to stove on [medium-high] heat
- add herbs to the pot (galangal root, lemongrass, kaffir lime leaf), and add cilantro stems, red onions, and the (optional) Thai chili(s)
- when it boils, add meat (if using shrimp add later, after mushrooms)
- bring to a boil again and let the boil roll until meat is cooked (if you prefer a less fatty soup, take out the foam/bubbles that float to the surface)
- then add about mushrooms, and just half the SimpliThai Tohm Kha Sauce; bring it to a boil once again
- (in case your protein choice is shrimp, add them now and let them cook for just a quick 10 sec.)
- adjust the flavor by adding more sauce to taste
- turn off stove, stir in chopped cilantro
- serve and squeeze in lime, adjusting the sourness to taste
